I love to cook. However, I do not love cooking for my husband. He's a meat and potatoes kind of guy who hates tomatoes in any form and is allergic to mushrooms. Incidentally, tomatoes and mushrooms are probably two of my most favorite foods. And the list of vegetables he'll eat is a small one. So cooking for my husband is a bit of a challenge.
Actually, that's not true. Cooking for my husband is a breeze. If you don't mind eating the same 3 meals over and over again. It's so difficult for me to find things that he will eat (and like) when I'm the adventurous eater that likes to try anything once. I have, however, come across a few recipes that I like and he either likes, or agrees to suffer through.
Here are 3 that are currently in our rotation:
Lemon-Pepper Pasta & Chicken
This recipe is from Better Homes & Garden. I found it a couple of weeks ago, and made it, all too sure that N would turn up his nose. Surprisingly, he said it was "Okay," which to me, is code for "I won't complain too much if you make it again." And that is a victory in my book.
It's a simple recipe that's perfect for the warmer Spring like weather. And I could even see it served chilled in the Summer.
Garlic & Pepper Marinated Flank Steak
This is one of those so-simple-I-can't-believe-I-need-a-recipe-to-figure-this-out type of recipes, but oh so yummy. I love grilling this during the summer and serving it with a salad (for the kids and I) and grilled potatoes (for the husband that won't eat salad).
Salmon with Brown Sugar and Bourbon Glaze
Salmon is my all time favorite fish, and surprisingly one of the few that my husband will eat. This recipe is a nice change of pace from our usual throw it on the grill with some lemon, salt and pepper. It's got a nice sweet flavor that the kids love too.
